Sant Ambroeus, a 5,973-square-foot, 120-seat restaurant planned for Royal Poinciana Plaza, is requesting approval from the town to serve breakfast, lunch and dinner.

“The proposed restaurant will be a tremendous asset to the Palm Beach Community and will be town serving,” states the zoning application filed last month.

At its March 9 meeting, the Town Council is scheduled to discuss whether to approve a special exception for the Italian eatery, which started in 1936 with a location in Milan and now has four New York locations plus two N.Y. coffee bars.

Proposed for Suite 304, the restaurant will be taking most of the space previously occupied by Del Frisco’s Grille, with the exception of a lobby area and a back dining area. Del Frisco’s, the 7,732-square-foot, 218-seat restaurant, closed in November.

At the time, operators cited the inability to open for lunch as having hurt business. Sant Ambroeus might have an easier time receiving permission to open early from the Town Council because it has a lower seat count, which helps determine how its parking requirements are calculated.

Based on the plaza’s 1979 agreement with the town, for every three restaurant seats there should be one parking space available in order for it to operate. Del Frisco’s was 57 open spaces short of avoiding having to request a variance approval from the Town Council to operate during the day, but it had almost 100 more restaurant seats than the number proposed for Sant Ambroeus.

There are 718 parking spots available in the plaza, including the 172 required to accommodate the Royal Poinciana Playhouse, but most spaces during the day are used by retail and office tenants and their visitors.

The zoning application for Sant Ambroeus lists its proposed hours of operation as 8 a.m.-10 p.m. Sunday through Thursday, and 8 a.m.-11 p.m. Friday and Saturday, but the restaurant would not be open for lunch on days the Royal Poinciana Playhouse has a matinee.

According to the chain’s website, Sant Ambroeus is the name, in Milanese dialect, of Sant Ambrogio, the patron saint of Milan.

The Palm Beach location, to be designed by Robert McKinley, will include a coffee bar, cafe and gelateria, it was reported last month. Daytime staff will number 15 and evening staff will number 23, according to its zoning application.
